Frittatas are what I like to call a one-dish wonder. You prepare everything in the same skillet and it all comes together beautifully. They are made with my one of my favorite foods: eggs, and you can throw just about anything you want in there. For this Farmer's Market Frittata, that's exactly what I did. I usually like mine to have some saltiness from the bacon and of course some melted cheese and then whatever vegetables I need to use up.
Farmer's Market Skillet
You will need:
6 eggs
Milk
1 T butter
2 slices of bacon (I used turkey)
1/2 a large yellow onion
1 portobello mushroom
1 bunch of swiss chard
1 handful of sliced cherry tomatoes
Slice Dubliner cheese into cubes
Salt and pepper to taste
Method:
1. Preheat oven to 375. Begin by cooking bacon in cast iron skillet until cooked. Remove bacon from skillet and add 1 T butter, diced onion, and sliced mushrooms. Cook until translucent.
2. Add in swiss chard and cook until wilted.
3. In a separate bowl, whisk together egg with a "glub glub" (as my Mama would say) of milk. Add in cherry tomatoes, chopped bacon, cheese, diced tomatoes, and salt and pepper. Stir.
4. Pour egg mixture into skillet and place in the oven for approximately 20 minutes. Enjoy!
