BEACH ROLL-UPS

We are getting ready to go the beach with friends in just a short few weeks, so the ocean and all it's goodness has been calling to me. I call these "beach roll-ups" because several years ago I went on vacation (with the same best friend) and her family and their friend Glennis made a similar wrap that I totally fell in love with. We would make an assembly line and make tons of wraps, wrap them up in tin foil, and have a week's worth of lunches. I'm pretty confident that this will be your new favorite thing. The main reason why I'm confident: Mango chutney whipped cream cheese is involved. You're welcome. In the last picture you can see accompanying sides that are the jam: green grapes and Whole Foods' Kale and Avocado salad. So good.

Beach Roll-ups
makes 3 wraps


You will need:

  • 1/2 an apple
  • 1/2 a carrot
  • 1/2 a cucumber
  • juice of 1/2 a lemon
  • baby spinach
  • whipped cream cheese
  • mango chutney
  • multi-grains tortillas (I used Rudi's)

    Method:

  • I used my blender to finely dice the apple, cucumber, and carrot. The best way to do this is to put the blender on the lowest speed and drop the produce through the hole of the lid. Also, make sure to work in batches so that you are dry chopping and not creating a bunch of liquid.
  • Next, squeeze lemon on top of slaw, then place everything in a fine sieve to remove extra liquid.
  • Take one carton of whipped cream cheese and add about 2 T of the mango chutney (feel free to add more, no one is looking) and mix together. This mixture will be fabulous for all sorts of things later on.
  • Take tortilla and spread about 1-2 t of the cream cheese mixture all over the tortilla. Then top with spinach and lastly with the slaw. Roll up and enjoy!

    Another variation: Use deli turkey in place of slaw, which can be made ahead of time. So good.
