MEAL PLANNING + SUNDAY PREP


Confession: after stuffing my face with another piece of Publix birthday cake, I am acutely aware of my lack of self control these days. I sat down today with a pen and paper and my phone and began actually meal planning for the week. Is this something that everyone does and I've just missed the memo? You are probably more organized than me! I've decided to start again on getting back on track with food + exercise. Sam and I were in the best shape of our lives when I got pregnant with Phoebe and I haven't been able to regain my discipline and lust for all things healthy. What is my problem?! It is so much easier to eat convenient food and to become a sloth. HOWEVER, the results are not so awesome.

Here's what I did today to help me help myself...

I looked for delicious recipes for four days. I wanted wiggle room for eating out or eating leftovers. I also went through my recipes and wrote down what we needed for each one. Here is this week's menu:

Monday: I want to introduce "meatless mondays." This week we are having pasta made from zucchini, tomatoes, onion + garlic. I just cut the zucchini longways in thin slices to replicate "noodles." This is a hit with Til, too.

Tuesday: I made this delicious roast last week and I want to make it again! So easy and totally delicious, plus it makes me feel like a modern day house wife. I added carrots to the onion and then roasted cauliflower to have on the side.

Wednesday: Matilda's actual birthday! She loves tomato soup so I am making Oh She Glow's roasted tomato soup. This recipe is also a total winner.

Thursday or Friday: Taco night! We make tacos to have over salad all the time. We prepare everything + fixings just like normal and skip the tortilla. I usually eat it over a bed of greens.

I think next week I will get to the store earlier and then prep all of the veggies to be stored in tupperware until they're needed. Do you do this? If you have any meal planning tips for me I'd really appreciate it!
