ZUCCHINI NOODLES + TOMATO SAUCE
Let's talk about zucchini noodles aka zoodles. The last time I made this delicious pasta alternative I cut very thin slices of zucchini by hand. So time consuming. This julienne peeler however is a total hero in this dish making strings and strings of zoodles before Phoebe can even be caught dangling from the nearest chair. It's good. It's not expensive. Buy one and thank yourself.
Let's get started, shall we?
Zucchini Noodles + Tomato Sauce
You will need:
- 2 zucchini
- 3-4 roma tomatoes
- 1/4 sweet onion or 1/2 of a small one
- 2 cloves garlic
- olive oil
- thyme, oregano, and basil to taste
- s + p
Dice your tomatoes and onions and put in a skillet over medium heat with a glub of olive oil and pinch of salt and pepper. Let it cook down until the onions are translucent and the tomatoes are liquidy. Then you can add rest of seasoning while stirring and then the minced or chopped garlic. Once that is good and bubbly, add your zucchini noodles. Cook until the zucchini softens to look like noodles. Zoodles.
