Advent Week 3: Coconut Milk Hot Chocolate

For week three of advent I wanted to create a really amazing hot chocolate. You could easily incorporate this recipe into a pancake breakfast or for sipping while crafting ornaments (like these amazing felt trees over on Lay Baby Lay today). We've been slowly phasing dairy out of our diets due to allergies and all kinds of things and it is scary at first. I don't want to give up cheese - I mean I bought some vegan cheese and well... what's the point. I was getting a little sad about a few things and specifically hot chocolate. After a really bad experiment I decided to give dairy-free hot cocoa another chance. This is intensely chocolately, so for little ones a tiny little cup will be just enough. For grown gentlemen and ladies, fill er up.

Coconut Milk Hot Chocolate
serves one

You will need:
1 cup of unsweetened coconut milk 
2 T coconut milk creamer
1.5 heaping T of cocoa powder (I like organic, usweetened)
1 t of organic cane sugar
1 square of very dark chocolate
1 T vanilla
1 pinch of salt
1 sprinkle of cinnamon

Over medium heat add milk, creamer, sugar and cocoa powder until heated and creamy, stirring often. Once heated (not boiling), add in vanilla, spices, and dark chocolate. Heat until the chocolate has melted.

Serve with or without mini marshmallows and chocolate shavings. Yum.
