Two Vegetable Smoothie Recipes


Like most people on the earth, one of my goals this year is to be healthier. Sam and I are eating mostly paleo and trying to substitute a few meals with super veggie packed smoothies. One of my very favorite features of our Vitamix is that we can get an almost juice like consistency by pulsing it until thin. I found this 3 day juice cleanse by Joe Cross (he did that documentary Fat, Sick, and Nearly Dead) and Sam did it for two days... I made it a day and a half. Does that count for something? I did however enjoy the recipes. Here are two that we liked: Gazpacho and then I made my own version of their Green Juice (in smoothie form). Recipes below!


Gazpacho Smoothie
You will need:

- juice of a lime
- 4 cherry tomatoes
- 1/4 red onion
- 1 red bell pepper (chopped)
- 1 cucumber (chopped)
- 2 celery stalks (chopped)
- bunch of parsley

place ingredients in a high-powered blender as listed and blend until smooth. enjoy!

Green Citrus Smoothie
You will need:

- 2 clementines
- juice of one lemon
- 1 red apple chopped
- 1" of ginger
- 6 leaves of lucinato kale
