Sam's Sunday Chicken
Ah, the weekend has gone by too quickly (what's new?). I just got home from an amazing super bowl party where Matilda basically started a dance party with all of our adult friends during the half time. It was so good. It was the first time I've ever taken Matilda to a grown up party and I was so proud of how awesome she was. She can carry on a conversation and she used her manners. All of those years of meltdowns and tears are being vindicated. She is such a great kid. I wanted to share with you guys Sam's "sunday chicken" recipe. He has been making these amazing roast chickens for sunday supper and it makes the entire house smell amazing. It's just too good not to share.
I really love this guy and I'm so thankful he likes to cook. It's such a huge blessing in my life to be able to eat amazing food because if left to my own devices I would most likely eat peanut butter out of the jar. Our friends from Yellow 108 sent over this work apron made from salvaged materials and it's so utilitarian and cool. The straps adjust in the back to move the apron up and down depending on what you're using it for. I'm hoping it gets lots of use in our kitchen, that only means good things for me. :)
Sam's Sunday Chicken
You will need:
- 1 5 lb organic chicken
- 2 onions
- 1 apple
- 1 clementine
- 1 lemon
- 1 apple
- 1 clementine
- 1 lemon
- 1 bulb of garlic
- 5 sprigs of rosemary
- 2 sage leaves
- 2 basil leaves
- salt and pepper
- olive oil and butter
Method:
Preheat oven to 450
Rinse chicken off and pat the chicken completely dry with a paper towel.
Heat 12 T olive oil and 2 T butter in skillet with finely diced 1/2 onion and 2 bulbs minced garlic. Cook on medium low until fragrant and onions are translucent. Strain olive oil and get all liquid out. Coat the chicken all over with oil using a basting brush. Next pat the chicken with herbs: 2 springs rosemary, 2 sage leaves, 2 basil leaves and s + p.
Stuff chicken breast side up in a 9 x 12 baking dish with aromatics: cut up chunks of one onion, one lemon, one clementine, one apple, and add a few cloves of garlic and 3-4 sprigs of rosemary.
Put remainder of aromatics around the chicken (whatever can't be stuffed).
Pour in 3/4 a can of chicken broth in baking dish with chicken.
After 30 min remove from oven and coat with remaining broth and olive oil. Return to oven.
Chicken cooks for 1 hour to 1 hour and 15 min, when golden brown remove from oven. Serve with your favorite sides and voila... sunday supper.
