Tuesday Night Tacos


Today is our ninth wedding anniversary. I can't believe that Sam and I have been together for over a decade. Wha? It's amazing to me that we are still learning so much about each other and growing and changing together. It's good. Matilda asked us today if we still liked each other (haha!) and I can honestly and enthusiastically say yes. SO grateful for who Sam is and what he brings to our family. He makes me a better person. What more could you ask for? Well, he is pretty hot, too. Bonus.

I wanted to share a dinner we had last night that is in a weekly rotation at our house. It's one of Sam's specialties so I thought today was the perfect day to share it. Can I say it's hard to make a bowl of meat look pretty? I love this with sriracha and also greek yogurt and good cheddar (we were out).

Tuesday Night Tacos
serves 4


You will need:

  • 1 pound of grass-fed beef
  • 1 pound of turkey
  • 1 can of organic re-fried beans
  • 1 packet of organic taco seasoning
  • 2 peppers (one orange, one yellow), diced finely
  • 1 yellow onion, diced finely
  • 2 T liquid smoke
  • glub glub glub of worcestershire sauce

Over medium heat cook onion and peppers with a little oil until translucent (about 10 min). In another large skillet, brown meat. Drain the meat and then add seasoning, liquid smoke, worchesterschire and peppers and onions. Cook until mixed thoroughly. Last add can of beans and stir until fully incorporated and bubbly.

This is one of my favorite comfort meals. Serve over salad - or not.
