Tips for Moms: 10 Minute Snack Mix
If you're like me, sometimes it takes a little extra energy to get through the long afternoons (aka the witching hours). This snack mix can be whipped up in 10 min flat, provides lots of great nutrition and is low carb/gluten free/paleo/vegan etc.
You will need:
- One package of raw, organic almonds
- Sprinkle or cardamom + cinnamon + 2 pinches of real salt (stir in small bowl to mix)
- Unsweetened coconut flakes
Start by taking organic, raw almonds and pouring a single layer onto a baking sheet. Place them in a cold oven and then bake at 350 until fragrant (about 10-12 minutes).
Get the nuts out of the oven and place the baking sheet on a cooling rack. Pour 1 T melted coconut oil on the nuts and then use a spatula or spoon to toss them. Drag nuts to center of baking sheet and sprinkle with spices, slowly making your way up and down the sheet. Add unsweetened coconut flakes and mix.
Let cool and then devour. Voila!
