I'm in the process of getting my recipes all in the same place, so you may have seen these Super Bars before. In fact, I am now realizing that it has been way too long since I've made them. These make an amazing post-workout snack, fast energy at breakfast, they're even rich enough to have for dessert. They are full of good stuff: coconut oil, cacao nibs, nuts. Enjoy!
Super Bars
makes approx. 12 small bars
1/2 cup raw hazelnuts (you could also use almonds)
1 1/2 cup chopped dates (or 10-15 whole pitted dates)
1 cup organic unsweetened shredded coconut
1/2 cup cacao nibs
1 T cacao powder
3 T coconut oil
1 t honey
Method:
Start by grinding the nuts and then add the dates one at a time. I use about 10. I then add the coconut oil until moist and then the rest of the ingredients. That's it!
Remove mixture from blender (I use and highly recommend a Vitamix) and use your fingers to work the batter in to a small glass baking dish. Flatten.
Chill in the refrigerator for at least 30 minutes. You will then be able to cut the mix in to bars. Ta da!
