Pizza might as well be a food group for the Graham's. If we're having a cheat night, we always want pizza. Since I've been trying to go gluten-free I've been trying to find fun replacements for my favorite meals. This pizza leaves you wanting nothing. In fact, I think I like it better than our typical fare.
Seasoning of your choice: Italian, red pepper flakes, oregano, etc
Mozzarella cheese
Basil
Pine Nuts
Juice of 1/2 of a lemon
Robusto or parmesan cheese
Method:
1. Follow instructions on pizza dough mix. I love that it makes two pies. For this, I divided the dough into two parts and froze one for a quick weekday dinner.
2. After dough has risen, spread out on to a cookie sheet and then coat with a T of olive oil and the seasoning of your choice. Bake for 7-9 minutes.
3. Top dough with sauce and mozzarella cheese. Bake for 11 minutes or so. Then add basil leaves and pine nuts. Cover toppings with shredded robusto cheese and stick back in the oven until cheese is bubbling. You don't want to over cook the basil.
4. This is a unique option for pizza that my sister schooled me on. After the pizza comes out of the oven, squeeze the juice of 1/2 a lemon over it. Delicious!
