Last friday I made this raw fudge for a low country boil at my best friend's house. She is gluten intolerant (in a serious way) so I wanted to bring something that would be amazing and gluten free. I pinned this recipe the other day and was like "oh, snap!" I'm totally making that fudge.
Raw Chocolate Peanut Butter Fudgebased on this recipe by Paleomg
You will need:
1 cup organic coconut oil
1 cup organic, unsweetened creamy peanut butter
1/3 cup raw honey
1/3 cup shredded, unsweetened coconut
1 t vanilla extract
a pinch of salt
5-6 heaping T of unsweetened cocoa powder
a handful of almonds
semi sweet chocolate chips
a sprinkle more of shredded coconut
1. I followed the instructions for the most part. Start by blending the coconut oil, peanut butter, shredded coconut, salt, vanilla, and honey. Once combined take half of the mixture and spoon it in to a bread pan. Top mixture with some of the chocolate ships. Who's counting? Stick in the freezer.
2. Take the remaining mixture and begin slowly adding the cocoa powder. I also mixed in some chocolate chips and almonds here.
3. Once the first mixture has hardened, pour the chocolate mix on top. I then added more chocolate chips and shredded coconut. Place in the freezer for 20 minutes.
4. Chop and serve.
Like any raw fudge or bar, you have to keep them cold or they will start to melt. I wrapped mine in tin foil and placed them right in the freezer as soon as I got to the party. I love bringing healthy treats to parties, because it shows people there are other options. They were a total hit and y'all they are so creamy and buttery and just divine. Let me know if you try 'em!
