FLAVORED WATER - CUCUMBER + WATERMELON
It can be a challenge to get in that "8 glasses" a day. I actually love drinking water but know plenty of people that need a little something extra to get it down. I love Meghan's flavor enhancements - we all did! Props to my husband for drinking out of a kitty straw. This is the last recipe in Meghan's Whole30 series. Water is an incredibly important part of a healthy diet. Good ole water helps us feel fuller longer, aids digestion, and gets old quick. However, drinking water and avoiding soda and sugary juices can also reduce cravings for sweet, salty, and fatty foods. Sometimes water needs to be spiced up. Try flavoring water by adding sliced fruit, vegetables, or herbs to a pitcher and steeping overnight. Some fruits high in water content, such as melon, are also prime for pureeing and enjoying as an Aqua Fresca.
Just a tip: Both of the following recipes are fantastic for cocktail mixing. Try the Cucumber Refresher with a little gin and the Watermelon Water with a splash (or two) of tequila. We won’t tell - if you don’t.
Watermelon Water
Yield 2 ½ quarts, 8 (8 ounce) servings
Here’s a great trick for cubing the watermelon.
1 (4 pound, personal sized) watermelon, cut into 1-inch cubes, about 6 cups
1 quart cool water
2 tablespoons fresh lime juice
¼ teaspoon kosher salt
Puree the watermelon in a blender. Combine the water, lime juice, and salt in a large pitcher. Place a fine mesh strainer over the pitcher and slowly pour the pureed watermelon through the strainer.
Refrigerate the Watermelon Water for at least 30 minutes before serving. This water keeps in the refrigerator for up to 4 days. Stir before serving as it tends to separate.
Serve over ice, top with soda water, if desired.
Cucumber Refresher Yield 2 quart, 4 (8 ounce) servings
Both ginger and cucumber are known for their detoxifying properties. This infused water is a prefect daily alternative to plain water.
2 quarts cool water
2 cucumbers, thinly sliced
1 (2 inch) piece fresh ginger, peeled and thinly sliced
pinch of kosher salt
Combine the water, cucumber, ginger in a large pitcher. Refrigerate over night.
