Snacks in Jars
There is something about eating food out of a jar that makes me really happy. We drink out of mason jars at home and have a ton of them in all shapes and sizes lying around. I love to use them around the holidays to make gifts and for storing dry goods, they have a million uses. Today I'm using them to pre-make snacks for us.
First up is a super simple garden salad. You could make countless variations of this but today I had carrots and radishes to use up and tons of spinach from Costco. The dressing is my go-to. Here's what I did:
Garden in a Jar
serves one
You will need:
- One jar (this is a wide-mouth ball jar)
- A BNTO (this thing is brilliant)
- salad mix or raw spinach
- extras: radishes (I sliced these using my new mandolin - watch those fingers!), carrots (used this peeler), nuts, dried fruit, etc
For the dressing:
- olive oil (love this one from Georgia Olive Farms)
- real salt and pepper
- drizzle of white balsamic vinegar
- drizzle of white balsamic vinegar
- squeeze of lemon
I whisked all of the dressed ingredients within the BNTO, filled the jar to the top with dry ingredients and screwed on the lid. So easy.
The girls love smoothies and it's a super quick and easy snack to make. We bought a bunch of Pearson Peaches at our local farmer's market that I needed to use up so I created this take on "peaches and cream."
Peaches and Cream Smoothie
serves one
You will need:
- one peach
- a half a frozen banana
- half a can of full fat coconut milk
- handful of ice
Blend all ingredients together and serve immediately. You can also freeze this and serve later. For drinking on the go we love this jar lid. The pink is so fun!
Another great snack from a jar is a yogurt parfait. You can get really creative with these and kids will love mixing everything together.
Yogurt Parfaits in a Jar
serves one
You will need:
- Greek yogurt
- fresh berries
- shredded coconut
- honey (we bought ours while we were at The Art Barn)
Assemble the jars by putting yogurt in the BNTO and then fully drying off the berries. Place berries in the jar and drizzle with honey, next add shredded coconut and top with slivered almonds. Store in fridge and dump yogurt in and stir. That's it!
Do you love food in jars, too? I think it's such a great and easy alternative to plastic which I'm trying to move away from using. These are quick and easy and can be stored from the night before.
